Peanut Pan Cake (BEE CHIAN KUEH)

Ingredients for Pancake batter
130g plain flour
1  small egg
160ml water
25g  sugar
1/2 tsp  yeast
1/2 tsp  bicarbonate of soda
Preparation of batter
Mix together and leave aside for at least 45-60mins (See that mixture is bubbling, allow to proof longer for best results)(Increase flour to 150g, sugar to 30g and water to 185ml if you prefer a thicker pancake)

Ingredients for Peanut spread
20g       peanut coarsely ground
15g       sugar (Or adjust according to taste)
Small amount of sesame seed (lightly fry and pound/press)
Preparation of Peanut Spread
Mix together for a dry texture
OR
Mix together with some butter for a peanut butter texture
Method of cooking
1. Pour batter into HCP, smooth out to get an even thickness
2. Cook on low heat for 6-8mins
3. Remove from pan, spread some butter and peanuts
4. Fold into half, slice and serve

Note: There is no need to flip pan, ensure that top is cooked and/or bottom is brown to liking. I moved the pan to the left then to the right of the stove after every 2 mins to get an even color.

BBQ Pork ~ Recipe from Munch Ministry.

Ingredients
600g minced meat, with some fats (it’s necessary as it’ll definitely enhance the taste of the Pork Jerky)

Marinade/Seasoning
1 Tbsp Fish Sauce
1 Tsp Dark Soy Sauce
1 Tbsp Light Soy Sauce
1 Tsp Five Spice Powder
1½ Tbsp Chinese Rose Wine
¼ Cup Sugar
3 Tbsp Maltose (if you prefer the meat to be sweeter, you may add more) – This could be replaced by honey.
1 Tsp Red Wine Dreg/红糟

Methods :

Marinate for about 1-2 hours.  Roll to thin slices.  Put on baking paper to cook in HCP.  When the bottom is cooked, take away the baking paper.  Cook both sides.

A Korean drama I finished watching within 2 days.  It’s nice nice nice!!

Ingredients :

3 large eggs

3 tablespoons milk

1 1/2 teaspoons pure vanilla extract

150 grams sifted cake flour

1 teaspoon baking powder

1/4 teaspoon salt

150 grams granulated white sugar

185 grams unsalted butter

Methods :

Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Butter or spray with a non stick vegetable spray, a 9 x 5 x 3 inch (23 x 13 x 8 cm) loaf pan. Line the bottom of the pan with parchment paper and butter or spray the paper.

In a medium bowl, whisk together the eggs, milk, and vanilla extract.

In the bowl of your electric mixer, with the paddle attachment (or with a hand mixer), place the dry ingredients (flour, baking powder, salt, and sugar) and mix on low speed for about 30 seconds or until blended. Add the butter and half of the egg mixture. Mix on low speed until the dry ingredients are moistened. Increase the mixer speed to medium and beat for about one minute to aerate and develop the cake’s structure. Scrape down the sides of the bowl. Gradually add the remaining egg mixture, in 2 additions, beating about 30 seconds after each addition to incorporate the egg and strengthen the cake’s structure.  

Scrape the batter into the prepared pan and smooth the top with an offset spatula or the back of a spoon. Bake for about 55 to 65 minutes or until the cake is golden brown and a toothpick inserted in the center comes out clean. If you find the cake browning too much as it bakes, cover with a piece of lightly buttered aluminum foil after about 30 minutes.

Remove the cake from the oven and place on a wire rack to cool for about 10 minutes. Remove the cake from the pan and cool completely on a lightly buttered wire rack.

The Pound Cake can be covered and stored for several days at room temperature, for one week when refrigerated, or it can be frozen for two months.

Makes one 9 x 5 x 3 inch (23 x 13 x 8 cm) loaf.

I won’t say the food is fantastic.  But it’s the company that matter the most.  My youngest brother came late but at least he turned up.  2 nieces bought birthday present for my mum.  How thoughtful!  lol

Although we don’t really celebrate Xmas, we don’t mind getting lot of presents. 

Before Xmas, met up 3 friends to do bake cookies and decorate them.  It was fun but tiring.  From 3plus, we ‘mess’ till 11plus.  Cookies dough were made in advanced by Elaine & Huiling.  Dough cutting, baking and decoration done together.  We were laughing at the mess we made.  Who would dare eat our cookies?  I think even ants would have 2nd thoughts or even fainted.  I must say, they were yummy actually.  Thanks for the 2 gals who made the doughs in advanced.

My Xmas present from hubby.  My dream mixer!  Initially, I was not thinking of getting as it’s a bit expensive.  But hb saw the advertisement in newspaper and cut it out.  Went to Courts to get it.  I wanted a purple color mixer but on the day of delivery, they disappoint me.  No purple and they sent a color similar to black.  And so, I rejected the delivery.  Next day, they delivered a red to me.  But found scratches and got them to do a one to one exchange.  Finally, displayed nicely on my kitchen top.

Espres Soup. 

Went with a friend to try this out.  Self service.

We ordered soup and wrap, it’a about S$12-S$16 per set, plus a drink too.

Verdict ~ The soup is nice but the garlic bread slightly small in size.  They have soup in bread too which you can try on your visit.  Not sure is the bread nice or not though.  The wrap, I would say so so.  Not much ingredients inside.

On our trip to JB one weekends, we decided to try food @ Old Town, White Coffee.  I fell in love with the half-boil eggs.

I believes in many things.  I believes in miracles and I believes that if one sees rainbow, there will be good things waiting to happen. 

While on the way back from Genting.

While on the way to IMM.  I saw the whole rainbow from one end to another but only managed to capture this part.

A few thinking points about this movie.  First, can a vampire make a human pregnant?  Next, will the baby be a human or vampire?  Will Bella crave for blood in part 2?  Anyway, for someone who don’t like romance movie, I am loving this movie. 

It’s such a natural motherly reaction for Bella to protect her unborn ‘unknown’.  The baby gal is beautiful.  And that makes me want to be pregnant.  haha…..

Part 1 is abit slow.  Let’s hope for the best in Part 2.

I’m so going to get a red color contact lens after seeing Bella eyes. 

Ingredients :

300g tapioca flour

3-4 pcs pandan leaves

20g margarine

1 egg yolk

140g icing sugar

120ml coconut milk

¼ tsp vanilla powder

Methods :

1.  Fry Tapioca flour with pandan leaves over low flame until fragrant.  Discard pandan leaves.  Set aside to cool.

2.  Sift tapioca flour and combine with icing sugar and powdered vanilla.  Add margarine, egg yolk and coconut milk and knead till dough is pliable.

3.  Roll out dough on lightly floured surface to about 1/2 cm thick.  Cut out into shapes with kueh bangkit cutters. 

4.  Baked @ preheated oven 165 degree for 15 mins.

We settled for Thai Express again.  I was disappointed with the service this round.  I ordered the set meal.  And thot the dessert will be Chendol but they only served tapioca.  When I asked the manager, he told me they forgot to inform me the previous dessert were out of stock!!  They should have inform me earlier and I could have order my Avocardo Milkshake.

Present??  None.  Ok, I got a carebear from him.  Although I’m not a soft toy person.  But this is really nice to hug and cutie.
